 How about Vegan Black Bean and Vegetable Tacos?

Ingredients:

  • Corn or whole grain tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 1-2 tomatoes, diced
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges for serving

For seasoning:

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika

Instructions:

  • Assemble tacos with the black bean and vegetable mixture.
  • Top with diced tomatoes, avocado slices, and fresh cilantro.
  • Serve with lime wedges on the side for squeezing over the tacos.
