Ingredients

For the Cauliflower:

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Taco Assembly:

  • 8 small corn tortillas
  • 1 cup shredded purple cabbage
  • 1 cup guacamole
  • 1 cup salsa
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  • Preheat the Oven:
    • Preheat your oven to 425°F (220°C).

 

  • Prepare Cauliflower:
    • In a large bowl, toss cauliflower florets with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until well coated.

 

  • Roast Cauliflower:
