Vegan Tamales Recipe

Ingredients for Vegan Tamales 

For the Tamale Dough (Masa):

  • 2 cups masa harina
  • 1 1/2 cups vegetable broth
  • 1/2 cup coconut oil or vegetable oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Additional, shredded vegan cheese 

 

For the Filling:

  • 2 cups mixed vegetables (corn, bell peppers, zucchini, etc.)
  • 1 cup black beans, cooked and mashed or whole (preference) 
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn Husks for Wrapping

 

Instructions:

  1. Soak corn husks in warm water for at least 30 minutes to soften.
  2. For the filling, sauté onions and garlic until softened. Add mixed vegetables, cumin, chili powder, salt, and pepper. Cook until vegetables are tender. Stir in mashed or whole black beans.
  3. For the masa dough, mix masa harina, vegetable broth, melted coconut oil, baking powder, and salt until you have a smooth, spreadable consistency. Let masa rest for best results, between 10 - 20 minutes, covered with a damp cloth. This allows it to fully hydrate.
  4. Take a already soaked corn husk, spread a thin layer of masa dough on the wider end, leaving space around the edges.
  5. Spoon a portion of the vegetable-bean filling down the center of the masa.
  6. Fold the sides of the corn husk towards the center, sealing the masa around the filling.
  7. Fold the bottom of the husk up and secure with a strip of corn husk.
  8. Steam tamales for 45-60 minutes or until the masa is firm.
